Dim sum is a dish made of special rice dough in which the filling is wrapped. The peculiarity of dim sum is that the pastry is rolled out very thinly, making the filling of the dumpling visible: vegetables, seafood, or meat. Natural dyes are often added to the flour, making the dough green, lemon or orange in color. People cook it in different ways – steamed, boiled, or fried. Basically, the cooking process is as follows: the dough is kneaded and the chef leaves it in the refrigerator for two hours during which time the broth is cooked. A little broth, chili, soy sauce, grated ginger, herbs, vegetables and chopped seafood is added to the filling. The chef forms a tube from the pastry and slices it into rings, which he then rolls into circles. Stuffing is put in each circle. The bottom of the steamer is lined with lettuce and smeared with vegetable oil. On all this cook lays dim sum. The meal is cooked for about half an hour. In addition, it is possible to mix the sauce. For this you need shrimp broth, chopped green onions, soy sauce, seasonings, sesame oil and garlic.

Externally, dim sum resembles manty, hinkali, or dumplings. However, it can be different – in the form of patties, shells, lilies, closed or open type, so you can see the filling. Decorativeness of the form depends on the desire and imagination of the cook. If we talk about the filling, there are no restrictions for chefs here. For stuffing, they combine meat, vegetables, chicken and seafood. The most popular options are combining pork with shrimp or greens, shrimp with soy cheese. Purely meat filling is rare.
